Taco Casserole


I made taco casserole for lunch today.

Meat

In a large skillet, cook 2-/12 pounds ground beef over medium heat until meat i no longer pink; drain.  Stir in 2 packages taco seasoning and 2/3 cup water.  Bring to a boil Reduce heat and simme for 5 minutes.

Note:  I make my own taco seasoning.

  • 2 t. instant minced onion
  • 1 t. salt
  • 1 t chili powder
  • 1/2 t corn starch
  • 1/2 t. red pepper
  • 1/2 t. instant minced garlic
  • 1/4 t. dried oregano
  • 1/2 t. ground cumin

This makes enough for 1 packet.

Stir in 1-16oz. can kidney beans, rinsed & drained.  Sppon meat mxture into a greased 8-in. square baking dish.

Sprinkle with 1 cup shredded Monterey Jack or pepper Jack cheese.

In a large bowl, combine 2 eggs, lightly beaten, 1 cup milk, and 1-1/2 cups biscuit/baking mix until moistened.

Pour over ceese.  Bake, uncovered at 400° fo 20-25 minutes or until lightly browned and a knife inserted nar the center comes out clean.

I topped it off with lettuce, tomatoe, cheddar cheese and greek yogurt.  Otherwise you can spread 1 c. sour cream over the top after it comes out of the oven.  Top with 1 c. shredded cheddar cheese, 2 c. shredded lettuce, 1 medium tomatoe diced and 1 can sliced ripe olives.  The kids don’t care for all of that so I just added to my plate and everyone got to add what they liked.  This was delicious and the kids had seconds and ate the beans.

So after lunch Chickie had orientation at Almost Home.

This is our local animal shelter.  Chickie signed up about 6 months ago to be a volunteer and they just called her for orientation.  She is always wanting to bring home animals and I told her this is a good way for her to help unwanted pets without having to bring them home to take care of them and these animals are neglected and they need all the extra love they can get.  We ended up spending 2 hours.  The orientation was only 30 minutes but Chickie wanted to stay and walk some dogs.

Chickie and Little Lady

Chickie had a blast and I could not get her to leave.  We are going to try to go at least once a week and spend at least 2 hours there.  I feel that this is a very good lesson for Chickie to learn about giving to those who are less fortunate no matter who or what it is. 
As you can tell from the picture it ended up being a very nice day.  Off to take our pups for a walk now.
