Happy Wednesday


Thank goodness it is finally Wednesday.  This has been a long week and I still have two more days to go.  With having two weeks of short work weeks this week is dragging.  I am ready for the weekend plus there was snow starting to fly when I came home tonight and the wind had really picked up.  It is finally starting to feel like winter in Iowa.

So I went to my circuit training class at noon today and we did a bunch of leg work and my legs were killing me so instead of running on the treadmill like I thought I would when I got home from work I did a 45-minute walking treadmill workout.  I was sweaty by the time I was done.

This was a sweaty and tough 45 minute workout.  I ended up going 2.851 miles and burned 481 calories.  I absolutely loved it plus it was tough workout.

So then when I was done I was craving something sweet but I am trying to be very good and drop weight plus I had just done an awesome workout so I didn’t want to ruin my diet.  Then I remembered a recipe I saw on Chocolate Covered Katie’s website: Peanut Butter Cookie Dough Cookies.

Let me tell you, I didn’t know about these when I read the ingredients because they have raisins in them.  But these are delicious.  I wasn’t sure if my kids would eat them but I had to beat them off with a wooden spoon otherwise they would have all been gone.  Defintely try this recipe if you are looking for a good and healthy peanut butter cookie recipe plus the bonus is, you don’t have to bake them.
