Fruit Cobbler


I had some peaches, strawberries and blueberries that needed to be used so I decided I would make a cobbler with it.  Now I kept finding recipes that had a cake topping and I wanted a oatmeal crumble topping so I made my own.

Fruit Cobbler

Filling:

  • 3 ripe peaches, peeled and sliced
  • 8 strawberries, quartered
  • 1/2 c. blueberries
  • 1/4 c. white sugar
  • 1/4 c. brown sugar
  • 1/4 t. ground cinnamon
  • 1/8 t. ground nutmeg
  • Juice of one lime
  • 1/8 c. flour
  • 2 t. cornstarch

Topping:

  • 1/2 c. flour
  • 1/2 c. oatmeal
  • 1/4 c. white sugar
  • 1/4 c. brown sugar
  • 1 t. baking powder
  • 1/2 t. salt
  • 6 T butter cut into small pieces

Preheat oven to 425°.

In a large bowl combine the filling ingredients which is the peaches, strawberries, blueberries, white sugar, brown sugar, cinnamon, nutmeg, lime juice, flour and cornstarch.  Toss to coat evenly.

 

Pour into a 2 quart baking dish.  Bake in preheated oven for 10 minutes.

While this baking:

In a large bowl combine the topping ingredients which is flour, oatmeal, white sugar, brown sugar, baking powder, salt, and butter.

 

 

Combine until everything comes together until it resembles coarse meal.

 

 

Place topping on top of fruit mixture and return to the oven and bake for 20 minutes or until golden brown.

 

Serve warm with whipped topping or vanilla ice cream.

This turned out fantastic and everyone loved it.  Defintely will be making this again.
