Meatball Skillet Meal

Hubby did the cooking again tonight.

Meatball Skillet Meal

He made one fantastic meal tonight.
You will need:
  • 1/2 c. finely chopped fresh mushrooms
  • 1/3 c. quick-cooking oats
  • 2 T finely chopped green pepper
  • 2 T finely chopped onion
  • 2 T dried parsley flakes
  • 1 t dried basil
  • 1 t dried oregano
  • 1/2 t dried thyme
  • 1/2 t salt
  • 1/4 t pepper
  • 1 pound ground beef
  • 4 medium carrots, sliced
  • 1 small zucchini, sliced
  • 1 – 14 1/2 oz can diced tomatoes, undrained
  • 4 cups hot cooked brown rice

In a large bowl, combine the first 10 ingredients.  Crumble beef over mixture and mix well.  Shape into 1-1/4 in. balls.

In a large skillet, cook meatballs over medium heat until no longer pink; draim.  Add carrots and zucchini; cook, uncovered, for 5 minutes or until tender.  Stir in tomatoes; heat through.  Serve with rice.

The hubby and I loved this, the kiddos on the other hand did not.

After supper we did some packing.  The kiddos are going with the in-laws for a week. 

As you can tell, the kiddos are terribly upset that they will be leaving for a week and will not see us.  Of course, Hubby is just as upset.

Yep, he is throwing a tantrum because they are leaving.  Oh, what will we do.  Now off to get the rest of the packing done.
