Yep that’s what I made.
Preheat oven to 350°.
Grease and flour two 9-inch round cake pans.
In a large bowl, cream 12 T butter (softened) and 3/4 c. creamy peanut butter until the mixture becomes fluffy.
Mix in 2 c. packed light brown sugar. Add 3 eggs (one at a time) mixing weel after each addition.
Mix in 2 c. all-purpose flour, 1 T. baking powder and 1/2 t. salt. Then add 1 c. milk and 1 t. vanilla extract. Mix until everything is incorporated.
Pour batter into prepared pans. Bake for about 45 minutes, until a toothpick inserted in the center of each cake comes out clean.
After the cake has cooled for 5 minutes, place a covered cake board or cooling rack over the cake and turn over. Gently remove the pan from the cake. Allow to cool completely before frosting.
To make peanut butter filling:
Cream One 8-oz. package cream cheese, softened and 1/2 c. creamy peanut butter together until fluffy.
Spread 3/4 c. of the peanut butter filling over the top of each cake. Let chill in the refrigerator.
To make the Chocolate Glaze.
Combine 1/2 c. water and 4 T. butter in a small saucepan. Bring to a boil. Add 1/2 c. cocoa powder, 1 c. confenctioners’ sugar and 1 t. vanilla extract to the butter-water mixture. Mix until smooth.
Using a metal spatula dipped in hot water, spread half of the warm chocolate glaze over the peanut butter topping on each cake. The glaze will thicken as it cools.
This cake is delicious. Everyone devored a piece. Please note this makes 2-9 in. round cakes. I am taking the second one to work this morning to share with my co-workers.
So after I got up and took the pups for a walk this morning. I came home and had my standard chocolate strawberry smoothie.
Which this time I added peanut butter and look what I did.
Yep, I emptied the jar of peanut butter so that means overnight oats in a jar for breakfast tomorrow. Yeah!!!
Well the kiddos do not have school today so they are still sleeping which meant I slept in a little longer today. Must get going to work and must make a list for the kiddos to do some chores today. Have a great Monday.
