I do believe that Spring is finally here. It is supposed to get to 84° today and right now it is 80°. Loooovvve it.
This morning hubby and I got up and took the pups for a walk.
It was a beautiful morning when we walked. Couldn’t ask for a more picture perfect morning. Of course it rained last night which meant the boots had to go on the pups.
Yep, Gizzy is not to happy about having them on. She was hiding under Molly so she wouldn’t have to have all of the boots put on. Goofy dog.
So when we got done with a walk it was time for breakfast.
In the mix today:
- Blueberry greek yogurt
- Honey-Nut Chex
- Peach Graduates Puffs
- Fresh Strawberries.
This hit the spot after our walk. After breakfast it was off to do some laundry, help Hubby move stuff in the basement and get the kiddos moving. Amazing how fast a morning can fly by.
So for lunch today I made Sweet ‘N’ Saucy Sausage Sandwiches (try saying that 5 time fast).
In a large saucepan, saute 1 pound sausage, 1/4 c. coarsely chopped onion, and 1/4 c. coarsely chopped green pepper over medium heat until meat is no longer pink; drain.
While meat is cooking:
Stir together 2/3 c. ginger ale, 2/3 c. chili sauce, 1/2 c. apricot preserves, and 1 T. onion soup mix.
Add sauce to meat and bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes or until slightly thickened, stirring occasionally.
Place 6 french rolls, cut side up, on an ungreased baking sheet; top with sausage mixture and 1/2 c. shredded cheddar cheese divided. Broil 4 in. from the heat for 1-2 minutes or until cheese is melted.
These are fabulous.
I served them alongside some green beans. Of course I was wanting some crunch with my meal so I topped my green beans with french fried onions. I absolutely love french fried onions and could sit and eat them plain. We don’t usually keep them in the house because of this reason. Well the sandwich got my sweet tooth started so I needed something fro dessert.
Fresh strawberries topped with chocolate syrup, carmel syrup and whip cream. Boy, oh boy, did these ever hit the spot.
Now it is off to make a gazing ball with Chickie outside to enjoy this beautiful sunday afternoon. Have a great afternoon.
