Upside-Down Pizza Bake and Irish Oatmeal Brulee


So last night for supper hubby made Upside-Down Pizza Bake.

Yep that’s what the hubby made for supper.

In the mix:

  • 1/2 pound Italian sausage links, cut into 1/4-inch slices
  • 1 cup spaghetti sauce
  • 1/2 cup julienned green peper
  • 1 cup (4 oz) shredded part-skim mozzarella cheese, divided
  • 1 cup biscuit/baking mix
  • 1 egg
  • 1/2 cup 2% milk (I used skim milk)

In a large skillet, cook sausage over medium heat until meat is no longer pink; drain.

Pour spaghetti sauce into a greased 8-in. square baking dish.

Layer with mushrooms, green pepper, sausage and 1/2 cup cheese.

In a small bowl, combine the biscuit mix, egg and milk until blended.  Pour over top.  Sprinkle with remaining cheese.

 

Bake, uncovered, at 400° for 25-30 minutes or until golden brown.

We made one with the veggies and pepperoni and one with no veggies with sausage and pepperoni for the kids.  This was delicious.  Even the kids loved it.  Will definitely make it again.

So the rest of the night was spent doing errands and dealing with a sick dog.

Not feeling so well.

Yep, she just doesn’t feel well.  She got sick again.  Poor pup.  She gets into the vet on Monday.  Hopefully she will at least start feeling a little better.

This morning we got up and Molly was feeling better so we took both of them for a walk.  I actually got to see the sunrise.

How beautiful is that

When we got back I decided to make Irish Oatmeal Burlee

Into the mix is:

  • 2 cups almond milk
  • 1/2 cup steel-cut oats
  • 1/2 cinnamon stick
  • 1 orange peel (1 in.)
  • Dash salt
  • 1/4 cup dried cranberries
  • 1/8 cup raisins
  • 1/8 cup maple syrup
  • 1/8 cup packed brown sugar

In a heavy saucepan, bring milk to a boil over medium heat.

Add the oats, cinnamon, orange peel and salt.  Reduce heat; simmer for 30 minutes or until thick and creamy, stirring occasionally.

Remove from the heat; discard cinnamon and orange peel.  Stir in the cranberries, raisins, syrup and a small amount of buttermilk if desired.  Cover and let stand for 2 minutes.

Transfer to an ungreased 6-oz. ramekin.  Place on baking sheet.  Sprinkle with brown sugar.  Broil 8 in. from the heat for 4-7 minutes or until sugar is caramelized.  Serve immediately.

How beautiful

Delicious.  This is definitely a keeper.  It made one serving but you could easily double it or triple it. 

After breakfast it was off to Chickie’s volleyball game.

She is definitely improving from last week.  Much more into the game and actually going after the ball.

After her game it was off to Younkers to do some shopping for Chickie.  Needs a spring coat.  Well we ended up looking at Easter dresses also.

She picked the purple one, I preferred the pink one.  She doesn’t care for the color pink at all.  We did end up getting her a spring coat.  Then it was time for lunch.  We went to Applebees.

Not something I would order again.  I only ended up eating a quarter of it.  It was pretty bland.  Now it is off to watch Brulesque.
