Hungarian Beef Goulash

I worked on supper.  Tonight it is Hungarian Beef Goulash, I got the recipe from Rocco Dispirito Now Eat This Cookbook.

Into the pot

In a Ducth oven is:

  • 6 garlic gloves, minced
  • 1 onion cut into large dice
  • 1 – 8 oz. jar roasted red peppers, drained and cut into large die
  • 1  – 28 oz. can whole plum tomatoes, roughly chopped, including liquid
  • 4 c. low-fat, low-sodium chicken broth
  • 1 1/2 T sweet paprika
  • 1 1/2 T smoked paprika.

Bring mixture to a boil over high heat.  Then cover, reduce the heat to medium-low, and simmer until the vegetables begin to sofetn, about 7 minutes.



While the vegetables were simmering, Hubby cut up 1 pound beef shank, trimmed of all fat and cut into 2-inch cubes.  We then seasoned the beef cubes with salt.

Then I stirred the beef cubes into the stew.  Cover, and simmer for about 1 1/2 hours, stirring occasionally.  The meat should be very tender.

Greek Yogurt


Remove the pot from the heat and stir in 1/2 cup Greek yogurt.  Season with salt and pepter to taste, and serve.

Ready to Eat

It was absolutely delicious.  Next time I do believe I would serve it over rice or mashed potates.
